Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 3 large eggs
  • 1/2 cup milk Can use low-fat milk for a lighter version.
  • 1 tsp salt Plus additional salt for boiling water.
  • 1 pinch nutmeg
  • Water for boiling Use saline water for boiling the noodles.
Filling Ingredients
  • 2 cups grated Emmentaler cheese
  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg until smooth. Let the dough rest for 10 minutes.
Cooking Noodles
  1. Press the dough through a spaetzle press into boiling salted water. Cook the noodles until they float to the surface, about 2-3 minutes. Drain well.
Caramelizing Onions
  1. In a large frying pan, melt the butter over medium heat. Add the thinly sliced onions and cook until they are caramelized, about 15 minutes.
Mixing and Serving
  1. Stir in the grated cheese into the caramelized onions, mixing until the cheese melts and coats the noodles.
  2. Serve the Kasespatzle immediately, topped with extra caramelized onions if desired.

Notes

Storage: Keep in an airtight container in the refrigerator for up to 3 days or freeze for future meals. Reheat in the oven or stovetop.
