Preparation
- In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg until smooth. Let the dough rest for 10 minutes.
Cooking Noodles
- Press the dough through a spaetzle press into boiling salted water. Cook the noodles until they float to the surface, about 2-3 minutes. Drain well.
Caramelizing Onions
- In a large frying pan, melt the butter over medium heat. Add the thinly sliced onions and cook until they are caramelized, about 15 minutes.
Mixing and Serving
- Stir in the grated cheese into the caramelized onions, mixing until the cheese melts and coats the noodles.
- Serve the Kasespatzle immediately, topped with extra caramelized onions if desired.
Notes
Storage: Keep in an airtight container in the refrigerator for up to 3 days or freeze for future meals. Reheat in the oven or stovetop.
