Ingredients
  

For the apple filling
  • 4 pieces apples of choice (e.g., honey crisp and Granny Smith)
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
For the topping
  • 3/4 cup almond flour
  • 2 tbsp maple syrup
  • 1 tbsp coconut sugar
  • 2 tbsp melted coconut oil
  • 1 tsp cinnamon
For the caramel sauce
  • 1/2 cup dates soaked in warm water for 10 minutes
  • 1/4 cup oat milk
  • 1/2 tsp vanilla

Method
 

Preparation
  1. Soak the dates in warm water for about 10 minutes.
  2. Slice the apples thin or into small wedges. Remove the cores.
  3. Heat a small, oven safe skillet. Add the coconut oil, apples, maple syrup, cinnamon, and nutmeg. Saute for 2-3 minutes.
Making the topping
  1. In a bowl, mix the topping ingredients: almond flour, maple syrup, coconut sugar, melted coconut oil, and cinnamon until crumbs form.
  2. Add the topping to the apples in the skillet, breaking it up into pieces and spreading it evenly.
Baking
  1. Bake at 350°F (175°C) for 30-35 minutes, until the topping is golden and the apples are tender.
Making the caramel
  1. Blend the soaked dates, oat milk, and vanilla in a food processor or blender until smooth.
  2. Add more oat milk if a thinner sauce is desired.
Serving
  1. Once the apple crisp is done, pour the caramel sauce on top. Slice and enjoy!

Notes

Store in the fridge for up to 4 days. Reheat in the oven or microwave before serving. Can be frozen for up to 3 months.
