Preparation
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of sugar, then press the mixture firmly into the bottom of the pan.
- In a large mixing bowl, beat the softened cream cheese with the remaining sugar until smooth and creamy using an electric mixer.
- Add the reduced apple cider, eggs, vanilla extract, salt, and ground cinnamon to the cream cheese mixture. Mix until well combined.
- Pour the cheesecake batter over the crust in the springform pan and smooth out the top.
Baking
- Bake the cheesecake for about 55-60 minutes, until set but slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for about 1 hour.
- Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight.
Notes
Store this cheesecake in the refrigerator for up to a week. Consider making it ahead for gatherings. For a low-calorie version, substitute with low-fat cream cheese and reduce sugar. Top with fresh apples or caramel for added flavor.
