Salad Ingredients
  • 2 cups broccoli florets Use fresh for the best crunch.
  • 1 piece Honeycrisp apple, chopped Any firm apple such as Fuji or Gala can be used.
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/4 cup raisins or dried cranberries
Dressing Ingredients
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the broccoli, chopped apple, nuts, and raisins.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad and toss until well mixed.
  4. Chill for about 30 minutes before serving for the best flavor.

Notes

For softer broccoli, blanch it for 30 seconds in boiling water and then cool in ice water. Serve the salad cold or at room temperature. Store in an airtight container in the fridge for up to 3 days. Use lemon juice to slow browning of apple pieces.
