  • 2 cups potatoes, diced Use firm potatoes for better texture.
  • 1 can cream of mushroom soup Substitute with cream of chicken if desired.
  • 1 cup beef broth Low-sodium options available.
  • to taste Salt and pepper Adjust seasoning according to preference.
  • 1 cup shredded cheese (optional) Use cheddar, Monterey Jack, or a blend.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onions over medium heat.
  3. In a baking dish, layer the diced potatoes and browned beef mixture.
  4. Pour the cream of mushroom soup and beef broth over the top, and season with salt and pepper.
  5. Cover with foil and bake for 45 minutes.
  6. Remove the foil and add cheese if desired, then bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  7. Serve hot.

Notes

Serve hot with a side of green salad or steamed vegetables. To store leftovers, cool and refrigerate for 3-4 days.
