Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef and onions over medium heat.
- In a baking dish, layer the diced potatoes and browned beef mixture.
- Pour the cream of mushroom soup and beef broth over the top, and season with salt and pepper.
- Cover with foil and bake for 45 minutes.
- Remove the foil and add cheese if desired, then bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve hot.
Notes
Serve hot with a side of green salad or steamed vegetables. To store leftovers, cool and refrigerate for 3-4 days.
