  • 3 large eggs Room temperature eggs work best
  • ¾ cup sweetened condensed milk For a lighter version, substitute with ½ cup self-raising flour

Preparation
  1. Preheat your oven to 325°F (160°C). Grease or line a 6-inch round cake pan.
  2. In a mixing bowl, whisk the eggs until they become slightly frothy.
  3. Add the Greek yogurt and mix until the mixture is smooth and creamy.
  4. Incorporate the sweetened condensed milk (or flour if you are making the cakier version) and combine until you have a well-blended batter.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 30–35 minutes, or until the center is just set.
  2. Allow the cake to cool at room temperature. For best flavor, chill it in the fridge for at least 2 hours before slicing.
  3. Slice and serve chilled, optionally topped with fresh fruit, honey, or a sprinkle of powdered sugar.
