  • 1 medium cooked sweet potato (about 1/2 cup) Make sure it's well-cooked.
  • 1 15 ounce can black beans Drained and rinsed.
  • 1/2 cup gluten free rolled oats Ensure they are certified gluten free.
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 tsp chipotle powder Optional if you want added spice.
  • 1 tsp garlic powder
  • 1/4 cup diced red onion
  • to taste Salt

Preparation
  1. In a large mixing bowl, combine the cooked sweet potato and black beans. Mash them together using a fork or potato masher until well mixed.
  2. Add rolled oats, cumin, paprika, chipotle powder, garlic powder, diced red onion, and salt to the bowl. Mix until all ingredients are fully incorporated.
  3. Form the mixture into about 8 patties, ensuring they are well packed.
Cooking
  1. Heat a large skillet over medium-low heat and add olive oil.
  2. Cook the patties for about 5-7 minutes on each side until golden brown.
Storage
  1. Allow the cooked patties to cool and store them in an airtight container in the fridge for up to a week or freeze for up to three months.

Notes

Serve on whole grain buns, lettuce wraps, or salads. These burgers pair well with simple toppings like sliced tomato and avocado. For meal prep, stack between parchment paper or pack with vegetables.
