10 Minute Air Fryer Chicken Sausage and Veggies

Ingredients
  

Vegetables
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
Seasoning and Oil
  • 1 tablespoon avocado oil Can substitute with olive oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
Protein
  • 1 package chicken sausage (12 oz), preferably robust Italian flavor

Method
 

Preparation
  1. Chop the veggies and place them in a large mixing bowl.
  2. Drizzle the veggies with avocado oil and toss to coat.
  3. In a small bowl, mix together the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
  4. Add the spice blend to the veggies and toss until well coated.
  5. Slice the chicken sausage into 3/4 inch rounds and add it to the bowl with the veggies. Toss everything together.
Cooking
  1. Preheat the air fryer to 390 degrees F, if needed, and spray the basket with cooking spray.
  2. Spread the veggie and sausage mix in a single layer in the air fryer basket.
  3. Cook for 10 minutes, flipping or shaking the basket halfway through the cooking time.
  4. Ensure the chicken sausage is hot and the vegetables are tender before serving.

Notes

Serve hot, optionally over brown rice or cauliflower rice. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months.
